If you want to cover your Z-Brick with the black mortar, you'd have to find another black mortar to cover the bricks, unless you want to keep the brick look but make the bricks black. If you want to make the bricks, black, you can use FLAT latex paint. We did our Z-Brick that had the black mortar with "white-wash" made with watered down flat white latex paint and it turned out great. Here's my project so you can see how the "white-wash" looks. As you can see, I didn't do the hearth - mainly because the inside of the fireplace is black and I couldn't decide where to stop the paint. LOL Good luck and I hope this helps you.

Why not just paint the mortar?
Did you mean mortar? As in a wet cenenticious hand troweled adhesive for setting bricks, tile & stone?
Oh wow! I was wondering the same thing!! My dad has 2 Walls in the kitchen with Z-Brick that has black mortar! Sooo 70s! Lol soo eventually I plan on white washing it (someday lol) to make it more in the current century. Lol
I've read that I could do it by using white paint and water mixed together. Then 'paint' it on with a paint brush. I'm not quite sure what to do for the black mortar except to paint that part with only white paint (no water).
