Just the grout should be sealed with grout sealer. Tile does not.
Glazed tiles don't require sealing, but the grout might. The hardware store will advise you.
If you use Epoxy grout and tiles are not porous(stone, pottery etc.) no sealing is needed. How to tell if your tiles are sealed before install https://www.tilerescue.com.au/faqs/how-do-i-know-if-my-tiles-have-been-sealed/
There are a lot of products that can be purposed as back splash tiles. You should research the ones that most appeal to you along with the recommended grout. As Molly and Lynn already noted, glazed tiles wouldn't need to be sealed. Lynn suggested stone and pottery that will need a sealant and there's also wood, cement and textured plasters that would as well. The sealant you use will depend on the material you choose.
I was wondering how you went and what you decided to do?
I think I need my splashback resealed as it seems to have some cracks there and I believe ants eat the grout and sealant when I was looking into it. I used a company for my showers a while back. Did you call a company to get it done or did you find it was easy enough to do yourself?
