Trim or prune? Two different things. Trimming and deadheading can be done at any time during the growing season. Pruning is typically done in late winter to early spring. I am in zone 9 in a climate very similar to yours, and I prune in late January to early February and have my first blooms by Easter. My roses are still blooming. See if these help.

Trim your roses between mid December and mid January, which is the ideal time if you live in Arizona.
I'm in AZ too. Where are you because Flagstaff area gets really cold & wet and here in Valley of the sun it's extremely hot & dry,and then there is every where in between depending where you are. I trim a little earlier, in Oct. or Nov., and our growing season starts in March, here in North Texas (Dallas). Bulbs go in around Dec. or Jan. for Feb. tulips. Roses start blooming again in March or April. And some rose bushes take the dry heat better than others, and some need trimming earlier or in early spring. Best wishes. ☺️
