Build a frame with 2X2's. You can use pallets and either paint or stain them depending on what kind of finish you want, to cover the sides. Put a piece of plywood or other 1/2 inch board on top and then cover with a glued on arborite or something else that is washable.

I like kitchen islands made from old dressers! You can find old dressers for less than 100.00 and then add a top of butcher block. The drawers make good storage or you can remove drawers to fit your needs. You can add feet to raise the height and paint or stain to coordinate with your kitchen.
