They turn into beautiful shrubs! My girlfriend has a sizeable piece of property and she takes all our leftover poinsettias and plants them. She has a beautiful grove of them. If you are not in the right zone, as they are tropical plants, you can still grow in pots.

I always plant my potted poinsettias on the ground after the Holidays and they do well (I'm in South Florida). I usually try to deadhead around September, this year I forgot so it won't get quite as red.
Unless you live in tropical or subtropical zone you dont. They do grow very well indoors in the cold weather in pots. You can move them outside when there is no possible frost. In ohio, sadly, that is may to mid may, But they grow beautifully and get very large then you have to figure out what to do with a large plant indoors,
