Sand it down then saturate the wood with a food safe oil. Never paint butcher block!
If you're still planning on using it as a butcher block, I'm not sure that painting is the best option.. But obviously that's up to you of course!
You can paint any wood by sanding it down, priming it with a stain blocking primer such as BIN Shellac Based Primer, and then painting whatever paint you would like. If it's going to get a lot or use, I would topcoat it with Varathane Polyurethane.
None of these products are necessarily food safe though.
I hope you aren't planning to cover the wood with paint. Many people would dearly love to have butcher block countertops.
