You can "trim" or "deadhead" all throughout the growing season. "Pruning" is typically performed in late winter to early spring. I am in zone 9 in southern California. I prune mine back in late January to early February and have my first blooms by Easter.

Like Naomie, I trim back our rose bushes all summer. Once the flowers are wilted, look for the first set of five leaves underneath the bloom and cut right above it. Then, in the spring, I'll prune the bushes so that they're ready for new growth in the summer.
