It would depend on what zone you live in. Since your Bay tree has been out for 2 years, it is tolerant of the winter you have there. If you expect a really bad winter with freezing temps it would be best to protect it by covering with a sheet to protect it from windy conditions. If you bay is in a pot, you could move it to a wall that is heated.
We live in zone 5 (Maryland) and I bring our 2 potted bay trees in for the winter.
