If you have an open floor plan, I’d try to do the same flooring throughout.
Only if you want to. If you have an open concept style home, many people do, as it keeps the flooring consistent throughout the space and makes the area appear larger.
Have you bought your flooring already? The reason I ask is that laminate isn’t a great product for kitchens. If it gets very wet it can buckle and swell. The best flooring - that looks like wood still - would be luxury vinyl planks. If using that one, I’d be very comfortable suggesting you use it throughout! One consistent floor does make spaces look more finished and bigger. :)
