You could paint them with hammered copper paint and turn the room into a funky steampunk theme.
As covering up goes, get anything you can fit in between the toilet and the pipe and just box it in... just leave access to clean outs

You frame in like a wall. Studs and drywall.
We made a water closet. Box the area with 2 x 4s and then use panelling to cover and panelling with thin plywood for the access door. The handle should be the same as your faucets.
