The easiest and fastest way to 'replace' tiled countertops is to not remove any tiles, but completely remove the sink, taps, and the base that the tiles are glued down on to, and install in place a brand new Quartz countertop.
This is not a diy project however. Any solid surface countertop will have to be measured for and installed by professionals. They have the tools to recut new holes for the taps, and to properly fit an undermounted sink.
