If you need to close it in, maybe a drop ceiling with the tiles would work for you. You will need help with this project because the track is quite lengthy and needs to be balanced and even when starting. It is relatively easy to do providing you have an extra pair of hands. If you need access to any plumbing, etc, this is the way to go.
You could consider building a regular height wall and leaving it open above it. We just did that when we enclosed a closet and hall to create an extra small room in our home. With our vaulted ceilings it meant there is gap between the top of the wall and ceiling which actually helped the smaller room feel more open.
