What should I use for a protective final coat or sealer?

I am installing a backsplash in my kitchen between my upper cabinets and my counter top. I am using a plastic type panel that resembles old fashioned ceiling tin panels. I got them at Lowes, it is called Fasade. The panels are 18" X 24" and have a lot of raised detail. I first gently hand sanded the panels to scuff them up. After wiping them down with a damp towel, I painted them with 2 coats of paint. Then I used my palm sander and distressed the areas of the designs that were raised. It looked great! Then I used 2 coats of polyurathane. I feared it would puddle and yellow and it did. I used only as little as I could and it looked fine as I applied it but as it dried, it settled into the indentions of the designs and looks yellow . I decided to repaint over the polyurathane and re-distress with my palm sander. Now what can I use as a protective final coat so I can wipe it down when needed instead of polyurathane?
