One side of the kitchen dual sink leaks damaging that cabinet floor. How do I repair it or replace just the flooring?

First you need to fix the leak. Depends on how bad the damage is. Manu people like the self stick floor tiles for the cabinet under the sink. You can also paint. I would use a semi gloss or loss, easier to wipe up drips and spills.
You just need to replace the cabinet floor, you should be able to find what you need at a home improvement store. Make sure there is no floor damage or damage to any other parts of the cabinet. We had a slow leak in the bathroom plumbing under the sink and the pressed wood did expand around the area the floor sat.
