A florist once told me to cut rose stems at an angle while holding them under running water...that is, if they are cut already. Cutting them off the bush: use a knife to cut the stem without crushing it. Worked/works for me.
If you're cutting them from a bush, look for the first set of five leaves that appears underneath the bloom. Cut above those five leaves. This will allow that stem to bloom again after the rose has been cut from it.
