My apple trees are taller than I would like and I would like to trim them. When would be the best time of year to do that? How do you trim them?

I've always trimmed them in late winter, early spring before they blossom. If you trim them in the fall you encourage new growth when it needs to be dormant for the winter. I love the blossoms, don't you?
Late winter to early spring is the best time to prune apple trees. So you have time to study these sites and watch the videos. Since you have never pruned before and my guess is they are overgrown at this point, here are a bunch of sites and videos.

Depending on your location, late winter or early spring time when the tree is dormant is best to prune an apple tree.
Contact your state for fruit tree care because it varies. I trim mine late fall and do not forget to paint the cuts with that tarry stuff to prevent insect infestations in the cuts
