Composting is easy. My grandmother simply mixed kitchen scraps in a coffee can then mixed that with more in a pile under a tree. Anything can be used as a container other than an expensive rotating composter. 5 gallon buckets with a lid can be filled with scraps then rolled on the ground to mix. When in the sun, scraps break down quickly and it is worth any effort.
Yes, winter is a hard time to start this. You’ll need space away from the house too.
There are MANY ways to make compost - depending on what you have available. DO NOT put meat scraps or bones in the compost.
i use japanese composting. Role wire into a 1 foot cage, open end and top. Put it upright. Cut a couple of flanges in the bottom and secure with wire stakes in the ground. I just put all my compostables into the cage. They rot and the rain puts the nutrients in the ground. you can move it around or make several if you have a large garden.
If you compost egg shells, carefully wash out the shells, because albumin (egg white) will attract mice.
Coffee grounds, shredded coffee filters, cut up paper, twigs should be added for aeration. Come Fall, run your lawnmower over dried leaf piles, then add them to your compost.
