I've only rolled my popcorn ceilings as I am not really into spraying. I don't like the overspray that can happen. Probably because I'm using the wrong head on the sprayer but whatever.
I checked the roller pad listing when I bought the pads as they state the types of surfaces they will work best on.
Bought a good grade of paint and went to work. It wasn't fast or easy as the popcorn takes work to get into the depressions but they came out great.
I agree about rolling and make sure that it's meant for textures. Wooster sells a foam roller that specifically lists popcorn.
