How do we stop plants from dying about every year or two?

We have one place where we plant an evergreen of some sort, with smaller evergreens around it. It lives for a few years and then dies. Could it be that a large rock is blocking the roots at a certain stage, because we have one other place we do the same with and have the same results. We found a large rock deep in the soil. We simply placed a rock on top so we would not plant there again. We have not found any rocks in the space I am asking about, but we do live in the Texas Hill Country. This time it died after a hard freeze but even my herbs survived the freezes. Can you advise, please?Thank you.
