Not every couch is recovered in the same way. But generally, you start by removing the current fabric. Save each piece, marking where it came from, i.e. left arm, right arm, etc. Use these pieces as patterns for the new fabric.
A 6' wide sofa can require 12 to 17 yards of fabric. How much new fabric you will need depends on whether you must match a pattern from one area to another; for instance, from the front to the sides. Solids don't require matching. Nor should small, random prints or patterns, but stripes and geometics (like this: https://www.joann.com/ellen-degeneres-upholstery-fabric-54-charcoal-los-feliz/15363245.html#prefn1=type&prefv1=Upholstery%20Fabric&addShipToHomeConditions=false&start=1) might require extra fabric. You should plan on replacing the cushion pads if they are more than 10 years old.
I urge you to watch YouTube videos so as to understand how fabric is fitted to a couch, but make notes as to how your couch was put together while you take it apart. Most seams can be machine sewn, but some areas may need to be hand finished.
