I don't understand how the mold get there as I keep the syrups tightly closed, even on my expensive maple syrup!

Keep it in the fridge and not cupboard.

Hello Linda! If your syrup is the REAL maple syrup variety and you have it in a container that gives you enough room--you can skim the mold off. However-if you have it in a bottle with a long narrow neck--I would recommend tossing it as you really won't be able to skim the mold off. If it is not the REAL maple syrup then I would toss it. Once opened, maple syrup should always be kept refrigerated!

You can carefully recoil real maple syrup and the skim off the mold. But you do have to do it carefully because it will boil over and make a huge sticky mess if you don’t monitor it closely. It just needs to come to a slow boil for a very short time.
