How do I landscape around this tree?

The smaller area has hostas but the larger area is mud. The tree provides a lot of shade so grass has not worked.

Can you fill the area with more hostas? You could also try lily of the valley or ivy.

There are lots of pretty groundcover plants. I especially like lamium plants (spotted deadnettle). There are several kinds, with green and white variegated leaves, and they bloom with pretty flowers, too.

Grass difficult to grow under most trees, a good solution is to mulch the area or considering plants that will tolerate conditions under the tree such as pachysandra hostas and lilies of the valley. I hope this helps .
Last year I planted impatience in front/between a hosta border and loved the color. When it rained, the impatience got watered from the drip line. It provided pretty with very little effort. Both plants like mostly shade over a lot of sun.
