How about a window a long window
I doubt you can open it totally because of the stairway. You will also have to check for wiring that may have been run through that wall. First check for outlets or light switches located along that wall on both sides. Also the question of load bearing walls comes into play. You may be better off calling in an expert to do the job. Better safe than sorry.
In my old house, we opened the kitchen to the living room but left a column where the light switches were for the kitchen and added a counter height breakfast bar. The first step is contacting a engineer to see if you have a load bearing wall where you want the wall to be opened up. We added a laminated beam above the opening. https://www.simplicityinthesouth.com/knocking-down-a-wall-and-opening-up-the-kitchen/
