We have an ivory which is very porous and absorbs stains. I’d like to know if anyone has ever painted one.

If you use it a lot it won't last long. Really not recommended. It will peel once sctarched.
Kitchen sinks are not difficult to replace if you buy one with the same dimensions. You can hire a handyman to put it in and do the plumbing work.
You do not need to remove granite to replace sink it installs from underneath or drop in.
