How do I replace a kitchen sink?

We have an existing undermount stainless steel sink. It is a double bowl sink. The counter is silestone. The sink is too small to be functional. We would like to replace it with a single bowl, thinking that would help. Cutting out a larger space in the counter is more money than we want to spend. The problem is we don't know what size the sink should be. The cut out in the silestone is 28 1/4" X 15 3/4" and 8" deep. Is the sink supposed to be the same size as that? We have been unable to find a sink in those dimensions.
