Any type of wood will work, but hardwoods are normally the best. The most important thing to consider is the type of sealant you use. I recommend to use an epoxy resin like this one: https://amzn.to/2HKwzAm

Arborite is not expensive and can give you a nice finish for many years providing you do not place hot pots on it. It is usually put on with a contact glue and you can buy the trim to match to go around the edge.
