personally, I like grape jam and jelly. look up how to prune them, and cover them with bird netting. the netting will take care of the birds pooping purple where you don't want purple. if you are bound and determined to get rid of them, you will have to dig them up.
If you want to get rid of them but don't want to dig up the stump, cut it down to the ground. Then every couple of weeks cut off any new growth sprouting up. Eventually, the grapevine will die.
They are virtually impossible to get rid --I have one that I have been cutting back--digging up what I thought was the whole root--it just keeps coming back--this has been going on for over 20 years now !
Just keep cutting it back as best you can.
