Hi Dee, you could use the old 1 cup of ammonia in a heavy duty plastic garbage bag routine. Place your metal greasy pans into the bag pour in the ammonia, then seal the bag well so no air can get into the bag. Set outside overnight and let the ammonia work. Next day carefully remove the pans and wash in hot soapy water. , and rinse, rinse, rinse so there's no trace of the ammonia left on the pans. The pans should be very clean. Be very careful not to inhale the ammonia fumes nor get any of the ammonia on your skin or in your eyes. Ammonia is very potent! Many people use this method for cleaning their oven racks and bbq grills.
I wonder if it'd work to use an oven spray product like this? My husband uses it to clean the glass on the inside doors of the wood burning fireplace and it works great.

Make a paste of baking soda and water then cover the entire surface of the pan. You want to look at it and see white everywhere. Cover it with plastic wrap and leave it overnight. In the morning, wipe it off and the grease will come too. If it doesn't get it all the first time, just repeat. Wishing you the best.
