Does anyone know how it would look if you put a modern back splash on an old wood wall? Or what would you do with it?

plywood? paneling? Get a great patterned tile online. The box stores don't carry anything worth driving to the store to buy in my opinion. There are some magnificent tiles online. Get a great color pattern that will add charm to the look of the wood.
You could try peel and stick types. There are many types now and they are made to adhere to most any surface. The surface needs to be very clean and dust free. It would be an inexpensive way to start. They have many types now too at home improvement stores and can be cut to any size.
