I agree with the plankboard or shiplap especially if you’ve painted it somewhere along the line. If you like a smooth look, put 1/2” drywall right over it. You would just need to make adjustments to any pendant light fixtures.

Extremely laborious. How important is it to be smooth? I've learned to like a lot of things lately.
