Make it imposible to get to! I used square metal fencing around mine. Hang moth balls on the fencing as well to mask the scent of the plants. If they tunnel in, put moth balls down their tunnels.
cayenne pepper is a deterant.
I've had an on-going battle with the cutest little bunny who has decided that my holly hock seedlings are a great snack. I tried moth balls, hot pepper, and soap - to no avail. Then I went to our local garden center and the man there recommended granulated fox urine. It's really gross! I sprinkled it in my garden on a Sunday evening, knowing we'd be away during the day because it's kind of smelly at first. Scared the little bugger away and he hasn't been back since.

I read this from Gma Kirk: A farmer gave me a gross recipe for repellent...but it works. cup or two of urine, tablespoons of crushed garlic, and cayenne pepper, two eggs in a gallon jug, shake well, fill rest of the way with water. Cap and let age a week. Then you drizzle small stream around the perimeter of whatever you want to keep them from eating. Works on rabbits.

Get a bag of blood meal from the nursery, spread through garden. The squirrels don't like blood smell at all and it also is a mild fertilizer (I just bought some, it's suppose to help with raccoons too - fingers crossed)
