Hi Laura,
You have to find a paint with absolutely NO VOC and no odor. Here's a project using a specific brand. I don't back a specific brand so please do your research when choosing a brand. I'm a Hometalk member like you who likes to help others. Hopefully this article will get you started so that you know exactly what to look for in a paint brand. Wishing you the best.

Hi Laura, this DIYer talks about it in depth and she gives several brands she'd recommend for that task. https://vintagerevivals.com/painting-furniture-for-a-baby-nursery-is-it-safe-to-paint-a-crib/
Hi Laura, how exciting. If you go to your local Ace Hardware, Lowes, or Home Depot they will have paints available that have been approved for use on furniture and areas for babies and I'm sure you'll be able to find a beautiful gray you love. Please be sure to check the labeling to insure it is "baby safe".
Look for a very low VOC (volitile organic compounds) level - that is the toxicity level of the paint.
