How to install engineered vinyl planking?
I currently have lino and carpet on our 2 floors, mix of both on each level. Can I just remove the carpet and run the planking from the plywood over the lino or will we see/feel that transition.

You will see the transition, but not necessarily feel it if the height of each type of flooring is close. There are many types and styles of transition pieces to cover the seam where the two types of materials meet. Start with the manufacturer of the flooring you plan on installing to see what they offer that matches your flooring. Schluter makes types of thin metal transitions that might work for you. If the heights just happen to match perfectly, run a strip of your flooring parallel to the lino to make the transition look more intentional. Go to a local flooring store. They will have many more choices and better advice than the big box stores. Depending on the type of flooring you decide on, you may be using an underlayment that will will have some effect on your finished height.
