Hi Kelli, here's what I found....

To further extend the shelf life of opened canned sauerkraut, freeze it: to freeze sauerkraut, place inside covered airtight containers or heavy-duty freezer bags. ... The freezer time shown is for best quality only - sauerkraut that has been kept constantlyfrozen at 0°F will keep safe indefinitely.

Sauerkraut is fermented which preserves it. Just put it in freezer bags and freeze it.

I like making a large amount then freezing. Then it is already flavored and ready to go which is always a PLUS.

I don't start from scratch, I use either canned, bottled or bagged. I drain most of the fluid and replace with chicken bouillon or broth enough to cover. I usually add basil, caraway seed some with garlic salt and maybe a bay leaf, thyme, never now since I don't use recipes so it is a bit different every time.

It needs to simmer for a couple hours.

you can freeze anything ; keep it airfree and well sealed ; using freezer that does not self defrost is best for longer time keeping items

make sure you push all the air out of the bag completely. I love sauerkraut with pork roast and mashed potatoes and lots of good pork gravy
