Cap Off the plumbing, after draining the water pressure and removing the fixtures.
If you don’t want the shower pan in there anymore, you’re going to have to demo it out which is going to make a mess where it used to be, so you might think about just putting a piece of painted 3/4” plywood spanning the top of the old shower pan.
In any case, you will want to permanently plug the old shower drain down below the floor, so the sewer gas doesn’t come up into the closet. I would do that by first sticking in a wad of something like old plastic bags, down low and then putting some concrete on top of it.
If you don’t want to demo all the wall tile, or plastic wall panels, then I would simply put in a freestanding shelving unit inside what used to be the shower instead of trying to get shelf brackets nailed/screws into the wall.
Of course, you’ll have choices on how to cover up the capped plumbing in the walls.
For a door, I would consider an “overlay door” and not a traditional jamb set. This would be buying a large solid core interior door, cutting it to size and screwing the hinges into the framing of the shower.
If you want a traditional prehung door in a jamb set to fit, then you’ll have to frame in the rough opening for it and put drywall over the RO.
