A thick roller would work. You'll also probably want a brush to work into all the masonry joints and the occasional spot on the bricks where the roller won't reach. The first coat will be time consuming, but after that it will get faster.
If you want to simplify your life in the future, use masonry stain so you don't have to repaint every year or two. When you buy your roller, use a thick nap. The package should indicate that it is appropriate for rough surfaces
Consider whitewashing. EASY, CHEAP and does not have to be white. You can still paint later if you choose. After years we tackled our huge wall and posted here on Hometalk, "massive brick fireplace whitewash success"
