  Sure you can. They make them to go to floor or at chair height to add a bench seat for a seating area. I add to kitchens all the time to give more room for seating.

  Am I using the wrong term? I want the bay to be ceiling to floor. Trying to get more table/chair space.

It depends on the bay window. Some large ones require “kickers” or diagonal bracing/framing that transfers the load back into the foundation.
Most jurisdictions require window-replacement permits.

As in some bay windows go to the floor level and some go to counter height.
The one’s that are floor level, require a window permit and framing techniques beyond this forum- so hire pro help.
