I think a paint that works with plastic should stay on the melamine cabinet. Be sure to sand them, prime then paint. You may even want to sand one more time at the end with a fine grit sandpaper just to make the finish nice and smooth! Good luck!
You can but make sure you purchase the right primer for slick surfaces so your top coat doesn't peel off.
In my experience, sanding and oil based primer like kilz makes paint stick to everything. I have painted laminate cabinets this way.
