Yes, if flat they make great tables. Just put over two saw horses for best support. Can paint or finish any way you like or just be utilitarian for work table -- don't have to worry about getting it messy.
You could use them as a table in the garage or craft room. Add legs that attach with screws and brackets. Paint them to look great!
