Here's a great post on making a bed canopy.
Attach two curtain rods to the ceiling - one above the head of the bed and one above the foot. Attach curtains to rods using the header and the hem (you might have to carefully open up the sides of the hem). Add a middle curtain rod if the curtains sag too low in the center. Or use curtain rods as described and get tulle or something from your local fabric store. It can be pinned around the rod above the foot of the bed and just draped over the one at the head of the bed and allowed to cascade down the wall.
