You'll probably need to scrub surfaces, sand existing paint, then prime and re-paint using a bathroom paint such as Benjamin Moore Aura, in semi gloss or gloss, for scrubability reasons.
Paint tends to peel if surfaces were not absolutely clean, or if you tried painting with water based paint atop older oil based paint.
I had this problem in a previous house even though I had an exhaust fan in the ceiling. Turns out that when I finally had a handyman come look at it, the previous owner had not vented the fan so it wasn’t taking out any moisture 😱.
Once it was properly vented, I no longer had the problem. So if you have a fan in the ceiling, have somebody come and check it out.

The humidity is making it peel open the window or add a small fan to move the air
