Draw up your design and calculate the amount of stone, don't forget you will need a substantial lintel of stone to go across the fire opening. If you order it at a Builders Merchants, they will help you calculate the amount of mortar or fixing agent you will require. You start by laying out the stones as you wish to see them starting at the bottom and working up Then when happy, start to lay them in order. . Pointing can always come later.
