Rain-x makes a glass treatment product specifically designed for interior glass surfaces. It's usually sold next to the original product in automotive parts stores. Follow the Mfg directions exactly for best results

I saw an article saying to fill a cotton sock with cat litter and keep it on the dashboard when the car is not in use . Cat litter will absorb the moisture in the air . I haven't tried this , but it sounds like it might work . Good luck !!

When your car windows fog up inside in cold weather, the defroster is not very effective in clearing the moisture from the glass because it just recalculates the high humidity air. The best way to clear the moisture from inside the glass it to turn on the air conditioner which circulates the high humidity air across the A/C evaporator coli where it is condensed into liquid water and drained out on the ground. The windows will clear within a few seconds because the air has become less saturated.
