I have light golden maple stained kitchen cabinets, and want to know how hard it would be to stain them a light gray

You would have to strip them first since most likely they are factory sealed. You could try sanding them, but that may take a while. It will be doable, but will take some time.

You need to lightly sand them down to get varnish off then stain then then varnish again
