How long after hanging drywall can I wait to apply the mud? Do you but the joints tightly or with a small spacing?

You can mud it right away!

I know that but it will be cold and I want warmer weather so it dries and not freeze. Can I wait for spring?

You want to keep some space between drywall joints (2-3 sixteenths). When wood framing expands and contracts, joints that are too tight can crack the joint compound. Consider paper drywall tape over the mesh type. If you are attempting to create an airtight installation, you will need to spray foam any gaps and let the foam cure.

Yes Bill you can wait until spring to add mud to your drywall. This article suggests that when you hang drywall in cold weather the temp where you are hanging the drywall should be 55 degrees F, and you can mud when you have a consistent temp of 55 degrees F. So that makes me question--depending on where you live and where your project is located--like a cold garage--whether now is even the best time to put up drywall unless you are planning to keep the temp around 55 degrees until you can mud.

Thanks for your help. This project is our camp. Maintaining 55 would be an improbability. I guess I’ll wait. We have other projects I would like to do first. I was looking to get a jumpstart. Thanks again.

Butt together as tightly as possible. I would suggest using the self adhesive tape. As long as the temperature and humidity are good, as Gk mentioned, you are fine. Higher humiidty makes drying time longer. I would suggest that you use a damp sponge to smooth the mud after it dries rather than sanding. It's a low dust alternative for a beautiful finish. I usually apply mud and smooth 3 times.
