You could cover your seeds with Remay cloth. Once they sprout and grow a bit, then just take it off. You could also put out bird feeders; hopefully the birds will go there and leave your seedlings alone.

We never had a problem with the birds, but the squirrels ripped my seeds and bulbs right out of the ground. I actually ended up with sunflowers under my bird feeder though from the spilled seed when the birds and squirrels squabbled over it.
If the birds are eating seeds that haven't sprouted yet, try raising your seedlings inside and then transplanting them. If the birds are eating seeds out of your already-existing plants, you could try covering your plants as others have suggested, or maybe try adding a scarecrow.
Get some bird netting and mount it on stakes above the planted area.
