As soon as you cut or drill holes for any edge of the steel, it is no longer galvanized in that area.
It will rust, sooner or later, even if you put silver spray paint in and around every cut or hole. The exposed screws will need to be stainless steel. I would seal all the seams & holes with silicone aquarium-grade caulk.
I would not remove the existing shower walls because of water & humidity infiltration at the tops & bottoms.
