Floor planks with self adhesive is one option. Many floor tiles are fairly inexpensive. Self stick backsplash is also inexpensive and easy to apply. Personally, I like beadboard, too. Good luck!

Have you seen those peel and stick backsplash tiles at Lowes and Home Depot? They look really pretty good like real glass tiles. They seem expensive but if you don't care about that, that would be a really easy solution.
