If it's a Hoosier, you already have an enamel surface to work on. You can store your supplies behind the doors and in the drawers.

first , paint transforms a piece easily . As for making it into a baking station ,
you can take the doors off the top of the hutch . Attach headboard to the back wall attach hooks to hang bakeware pans or measuring utensils . If there are drawers , you can replace a few with baskets . I would measure the top and either put a wood top of go to a place that sells stone countertops and buy a scrap piece that they will cut for you . Allow in your measurement , for an overhang for the counter area , for a bigger workspace . Good luck !

Do you have a flat space? If so, cover with a food safe covering. My grandmother did that with hers and she covered the flat area with cheesecloth. She kept all her baking supplies (pans, flour, dough roller, and such) in the storage areas above and below. I inherited her hutch and I want to cover the flat area with tile but until then I cleaned & painted and am using it to display some of her depression glass pieces.
You could try and find a piece of marble to fit the work surface - that'd be amazing for making pastry on :)

I like the idea the commenter above said for putting a piece of marble or you could go with granite or something less expensive that will still look great. I'd paint the hutch a neutral color and then get some wicker baskets for storage and decorate the top with a 3 tiered tray, some faux plants or herbs. It could be really fun to bake on!
Paint the whole thing white or lt blue add a lice of stainless steal ,marble or wood to the counter top for baking . Re do the hinges and knobs clean them up or get new
