I actually tried this last spring. It took A LOT of food coloring to add just a little color but you can do it. I added a sealer after painting and that seemed to help lock the color in.
You can use acrylic craft paints as long as your paint is water based. How much you need to add depends on how much of a color change you want to make. If you need to add a lot of acrylic, you're better off getting new paint in the color you really want. Whether the additions get you what you want depends on your eye for color.

An interesting idea! I usually use craft paints or sample paint for projects like that. Basically any water base paint.
